25 Days of Christmas Cookies: Peppermint Bark

Peppermint Bark…another sweet that isn’t a cookie, but totally fits into this list! The last time I made this bark was in high school.  I made several batches and packaged it up in festive containers for friends.  I love cutting mine into triangles and shards that show off the layers of chocolate.  This recipe is for 3 layers, but if you prefer a thin bark or you are short on time just eliminate the first white chocolate layer! Peppermint Bark makes for great gifts because it freezes so well!

1 pound white chocolate

1/2 pound semi-sweet chocolate

3/4 teaspoon peppermint extract (divided)

4-5 candy canes, crushed


1. Line a jelly roll sheet with foil, then top it with parchment paper.

2. Using a double boiler, or a glass bowl, melt 1/2 the white chocolate over simmering water.  Stir constantly until smooth.

3. Remove from heat and add 1/4 teaspoon peppermint extract.

4. Spread in a thin layer over the parchment paper. Chill in refrigerator for 20-25 minutes.

5. Part way through chill time, start melting the semi-sweet chocolate and then repeat the same process.

6. Repeat with the remaining white chocolate.  Before chilling, top with crushed candy cane.

7.  After the bark has set, remove from fridge for about 10 minutes.  Cut into shards, squares, or whatever shape your heart desires.

8. Package up or enjoy!
