25 Days of Christmas Cookies: Peanut Butter Blossoms

Call me crazy, but for the next 25 days I will be baking and sharing the 25 cookies that remind me of Christmas. Many of the recipes will be ones I grew up baking with my mom.

This first cookie is my holiday spin on a classic Betty Crocker recipe.  I grew up eating Peanut Butter Blossoms with Hershey kisses, but a few years ago I made the switch to mini peanut butter cups.  I used to bring them into work every week…and that was before I had a KitchenAid mixer to make life easier.  They are one of my favorites.

To make them feel festive, I rolled them in multicolored sparkling sugar, rather than granulated sugar.  They add a fun crunch.  I love the multicolor, but feel free to use solid colored sugars!
