Friday Happy Hour: Lemon Fizz

I recently made a Lemon Bundt Cake for a friend’s birthday with candied lemon peel on top.  This process resulted in a lemon simple syrup!  I guess the extra effort to candy the lemon peel paid off! I knew that the next step was to find a cocktail to use it in.

Even though summer is coming to an end for many, in AZ we still have several weeks of HOT weather ahead! This lemon cocktail hit the spot and will be perfect for the holiday weekend. Who doesn’t like a drink with bubbles and lemon?!

Lemon Fizz - bright and bubbly cocktail!

 Lemon Fizz

– 1 1/2 Parts Vodka (bonus points for citrus vodka!)

– 1 Part Lemon Juice

– 3/4 Part Lemon Simple Syrup (leftover from this recipe: Food Network)

– Sparkling Water

– Lemon Wedge

– Ice

Pour the vodka, lemon juice, and simple syrup into a shaker with ice.  You can substitute the lemon simple syrup for a plain one, but make sure you use plenty of lemon juice!  Shake for at least 30 seconds to really break up that ice. Pour over ice in your choice of glass, then top with sparkling water or soda. Garnish with lemon and enjoy!
